Chicken breast with homemade wild garlic pesto and oven vegetables

Give your free-range chicken dish a fresh touch with homemade wild garlic pesto.

Ingredients

For the chicken

 

  • 2 free-range chicken breast fillets from Nature & Respect
  • 1 tbsp olive oil
  • Salt and pepper

For the wild garlic pesto:

 

  • 50 g fresh wild garlic
  • 50 g grated Parmesan cheese
  • 50 g pine nuts (or walnuts as an alternative)
  • 100 ml olive oil
  • 1 garlic clove
  • Salt and pepper

Für das Ofengemüse:

 

  • 300 g carrots (colored, if available)
  • 200 g small potatoes
  • 150 g zucchini
  • 1 tbsp olive oil
  • 1 tsp dried thyme or rosemary
  • Salt and pepper

Preparation

  1. Preheat the oven to 200 °C. Cut the vegetables into bite-sized pieces and mix with olive oil, thyme, salt and pepper. Spread on a baking tray and roast for approx. 25 minutes until golden brown. 
     
  2. Season the chicken breast fillets with salt and pepper. Fry in a hot pan with 1 tbsp olive oil until golden brown on both sides (approx. 4 minutes per side). Then keep warm. 
     
  3. Blend the wild garlic, parmesan, pine nuts, olive oil and garlic in a blender or with a hand blender to a smooth paste. Season to taste with salt and pepper. 
     
  4. Place the chicken on a plate and brush with the wild garlic pesto. Serve with the oven vegetables and garnish with a little fresh Parmesan if desired.
