Crispy free-range chicken inner fillets with honey and mustard dip

Quick, easy and golden brown, juicy and perfect for dipping!

Ingredients

For the chicken inner fillets:

 

  • 500 g free-range chicken breast inner fillets
  • 1 egg
  • 50 g flour
  • 100 g panko breadcrumbs (or breadcrumbs)
  • 1 tsp smoked paprika powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper
  • 1 tsp olive oil (optional, for extra crispiness)

For the sweet potato wedges:

 

  • 2 large sweet potatoes
  • 2 tbsp olive oil
  • 1/2 tsp paprika powder
  • Salt and pepper

For the honey and mustard dip:

 

  • 150 g Greek yogurt
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • Salt and pepper

Preparation

  1. Season the chicken breast inner fillets with salt and pepper.
    Prepare three bowls: Place the flour in the first bowl, whisk the egg in the second and mix the panko breadcrumbs with the paprika powder, garlic powder, onion powder, salt and pepper in the third.
    Roll the chicken inner fillets first in the flour, then in the egg and finally in the panko mixture. Press down lightly for an extra crispy texture.
     
  2. Peel the sweet potatoes and cut into wedges. Mix in a bowl with olive oil, cinnamon, paprika powder, salt and pepper until the pieces are evenly coated.
     
  3. Preheat the Airfryer to 190° C. Place the sweet potato wedges in the basket and cook for approx. 15 minutes, turning halfway through. Then place the breaded chicken inner fillets in the Airfryer and cook for approx. 12-15 minutes until golden brown and crispy. If necessary, spray with a little olive oil to make the breading even crispier.
     
  4. In a small bowl, mix together the Greek yogurt, honey, Dijon mustard, lemon juice, salt and pepper.
     
  5. Serve the crispy chicken inner fillets with the sweet potato wedges and the honey and mustard dip. Garnish with fresh herbs such as parsley, if desired.

Preparation tip: To make the breading extra crispy, spray the fillets lightly with oil before cooking in the airfryer. This creates a perfect golden brown crust!
