Free-range chicken Francese

Tender chicken in a golden lemon butter sauce - this chicken francese is perfect for any occasion!

Ingredients

  • 4 free-range chicken breast fillets from Nature & Respect
  • 2 lemons
  • 400 g flour
  • 4 eggs
  • 8 tbsp olive oil
  • 60 g butter
  • 300 ml white wine
  • 200 ml chicken stock
  • 2 tsp Worcestershire sauce
  • Thyme (for garnish)
  • Salt
  • Pepper

Preparation

Prepare the ingredients:

  1. Wash the chicken, pat dry, place in a resealable freezer bag and flatten evenly with a meat mallet 
  2. Slice the lemon and roughly chop the thyme
  3. Whisk the eggs in a bowl and season with salt and pepper. Pour the flour into a second bowl
  4. Dredge the chicken first in the flour, then in the eggs and again in the flour
  5. Heat the olive oil in a pan and fry the breaded chicken until golden brown
  6. Keep the finished chicken warm until ready to serve
  7. Melt the butter in the same pan, then add the lemon slices and simmer for three minutes
  8. Then deglaze with white wine, chicken stock and Worcestershire sauce, season to taste and simmer for 10 minutes
  9. Arrange the chicken on plates, pour over your lemon butter sauce and garnish with thyme
