Lemon and herb free-range chicken with ratatouille

Tour de Cuisine Finale at Nizza! We celebrate with Provençal lemon and herb free-range chicken and grilled ratatouille.

Ingredients

  • 2 packs of free-range chicken breast fillet - Tender herbs from Nature & Respect
  • Juice and zest of a lemon
  • 1/2 tsp salt and pepper
  • 1 eggplant, diced
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 red onion, diced
  • 2 tomatoes, diced
  • 3 tbsp olive oil
  • 2 garlic cloves, finely chopped

Preparation

  1. Place the free-range chicken breast fillets in a bowl and mix with the lemon juice and zest, salt and pepper.
  2. Place the prepared vegetables in a large bowl, add the olive oil and chopped garlic, season with salt and pepper and mix well.
  3. Preheat the grill to medium heat.
  4. Spread the vegetables in a grill pan or on aluminum foil and place on the grill. Grill for about 15-20 minutes until tender and lightly browned, turning occasionally.
  5. Place the marinated free-range chicken breast fillets on the preheated grill and grill over a medium heat for about 6-7 minutes per side until cooked through.

Arrange the ratatouille and free-range chicken breast fillet on a plate, serve and enjoy!
